Corn Salsa

Ingredients:

2 anaheim chiles - cored and seeded, finely diced
2 fresh tomatoes - skinned and seeded, coarsely chopped
1/2 red onion - diced
2 bundles scallions - chopped
1 red pepper - cored, seeded and chopped
4 sprigs parsley - minced
Juice of one lemon
1-2 ears of corn - remove kernels, boil for 5 minutes, strain and chill
1 1/2 teaspoons coriander seed or mustard seed
salt and pepper to taste
cayenne, optional to taste
