Halibut is quite firm and stands up nicely to the currying process so that's the fish I've used for this dish. I also found really nice corriander and fresh potatoes at the St Georges market this week and that makes a world of difference in the taste. I think I'll abandon Tescos now.
Recipe
Grind the following ingredients to a fine paste in a blender adding a little water: 1/4th Fresh grated coconut + 15gm Fresh Corriander leaves (cilantro) + one tomato + 3 green chilies + 3 cloves garlic (chopped) + 1tsp cumin seeds +1/4th tsp turmeric powder + 1 tsp curry powder (garam masala)
Heat 3 tbsp oil in a saucepan. Fry the paste on medium heat until dry (~10 min). Stir occassionally. Add two potatoes (peeled and cubed) and 3 cups of water. Boil until the potato is half done (~15 min). Add 4-5 pieces of fish and boil for 20 min until the fish is done and the potatoes are soft. Serve with plain boiled rice.
