Lemon and Blueberry go so well together!
Mix 1 cup flour, 1 cup raw sugar, 1/2 tsp salt and 1/2 cup Smart Balance -roll out and place in cookie molds or just lay out on a cookie sheet and score with a fork for easy breaking once baked.
Bake at 300 degrees until done- about 30-40 minutes.

I dipped these in 1 cup melted carob chips mixed with 1 tsp lemon juice and 1/2 tsp pepper, sprinkled with sugar. Lay out on wax paper to set.
