Caramel Apple Custard Pie with Sour Cherry

This was a two time near disaster!
First off I wanted to make it a tart....the tart was a spring pan and before I realized it I nearly lost all the custard! Then after it baked over an hour, it still was not done completely when I flipped it! Felt like Friday the 13th around here...
In the end it came out fine. Recipe will post after I make some adjustments....
Here it is:
1 cup cherries
2 apples, peeled and sliced
Egg replacer for 2 eggs
1/2 cup brown sugar
1 cup soy creamer
1 tsp cinnamon
1/2 tsp nutmeg
1 cup caramel (vegan- recipe on previous photo)
Line the pan you choose with apples and cherries.
Combine all the ingredients except caramel and beat well.
Pour over apples.
Bake 475 degrees 30 minutes
Reduce heat and bake an addition 40 minutes at 350 degrees.
Cool. Drizzle caramel and serve.
