Chicken Biryani by Hafees

I called Hafees to ask for the recipe and he came over and made it himself - too much of a perfectionist.
Cut and marinate a medium size chicken (1.5 kg) with 1tsp chili powder + 1/2 tsp turmeric powder + salt + 1/2 cup plain stirred yogurt for 30 min
Finely slice two medium size onions and fry in 6 tbsp oil (4 tbsp veg oil + 2 tbsp ghee) until well browned. Squeeze the remaining oil from the onions and keep aside. Retain the oil in the pan.
Wash 3 cups of rice and drain. Mix the fried onions with the rice so that the oil coats the grains. Add 6 cups of boiling water and cook. Add salt to taste.
Grind the following spices to a fine powder in a mill: 6 tbsp fennel seeds (saunf) + 1" cinnamon + 4 cardamoms + 4 cloves.
Finely slice three medium size onions and fry in the remaining oil in the pan until translucent. Add the powdered spices and the marinated chicken with 1/2 cup water and cook. When the chicken is almost done, uncover and increase the heat to dry up the curry. Add salt to taste. Separate out the remaining liquid from the chicken and mix the chicken pieces with the rice. Pour some of the gravy over while serving.
