Blueberry Mango Panna Cotta Party

Easy, Elegant!
Recipe:
4 tbsp warm water
4tbsp agar agar
1 cup soy milk
4 tbsp agave syrup or brown rice syrup
1 cup soy cream
1 tbsp vanilla or 1 vanilla bean
2 ripe Mangos, peeled and pureed
Sprinkle the agar over the water and mix until dissolved.
Insauce pan, heat the milk and agave until just boiling - lower the flame and add the agar mixture- combine well.
Whisk soy cream and vanilla in. Pour half of the panna cotta in glasses and refigerate 3 hours. Pour the rest into the mango puree and set aside until the glasses are set.
Once set, pour the mango layer on top and refigerate another hour or so. Add you choice of fruit- I made a simple syrup with blueberries, cooled and placed them over the top and then added more fresh.
Be creative- you can do this with many fruits, flavours and spices!
Served 4-6 depending upon your glass or timbale!
