Here is the recipe:

Feeds 6-8
12 tomatoes, washed and chopped
1 onion, chopped
1 red bell pepper, roasted and chopped
2 zuchinni, sliced
4 cloves garlic, minced
1.5 cups macaroni, cooked
2 stalks celery, thinnly sliced
1 carrot, thinnly sliced
1 cup mushrooms, sliced
1 cup spinach leaves
1 cup kidney beans
1/4 cup burgundy wine
1/4 cup Balsamic vinegar
Salt
Pepper
4 tbsp parsley
EVOO
4 tsp brown sugar
6 cups vegetable broth

Saute the onion, garlic and veggies in olive oil and then add the vinegar. Introduce the broth and add the seasoning to taste. Simmer 20 minutes or more on low heat. Add the kidney beans and pasta- heat through and then add the wine. Season again and simmer an additional 10 minutes plus.
