Basically - The crust is 1 cup of crushed Vanilla Wafers, 1/4 cup vegetable margarine and 1/4 cup coconut- pulse and press into tart pan. Split the apricots and line the outer circle of the tart with the apricot halves- slice 3 apricots and arrange as a "flower" in center. Pour "lemon curd" over the tart and bake 35 minutes at 375 degrees or until done. Lemon curd recipe on previous post.
