Spinach Stuffed Veggie Crab in Puff Pastry

1 recipe Puff Pastry (make mine previous post or buy)
1 cup Toffutti Sour Cream
1/2 cup chopped waterchestnuts
1 cup chopped spinach, cooked
Salt and Pepper to taste
2 tsp fresh thyme
1/8 cup chopped parsley, fresh
1 whole veggie crab or 1 cup sliced
Juice from 1 lemon + zest
Preheat oven to 400 degrees.
Mix all ingredients except crab, lemon, pastry and zest.
Lay out pastry - place crab in center and spoon the filling over it- add lemon juice and fold together like a package.
Sprinkle with some zest and rice parmesan and bake 35 minutes.
Serves 6-8 as appetizer.
