No Bake Cheezecake with Raspberry Sauce

Just a little bite.....recipe to follow.
1 1/4 box extra-firm tofu
3/4 cup coconut milk
1/3 cup raw sugar
2 Tsp lemon juice
1 tsp. lemon zest
2 Tbsp agar flakes
1/2 tsp. vanilla
1/4 tsp. salt
Blenderize the tofu, lemon. Set aside.
In saucepan heat sugar and coconut milk, salt. When it begins to boil, add the agar and stir over a low flame until it begins to thicken. Cool slightly and then mix together with the tofu- add vanilla and pour over a graham cracker or cookie crumble crust. Refrigerate overnight or 6-8 hours.
6 Servings.
