Artichoke "Sausage" Panini with Roasted Red Peppers

2 slices of Flatbread (I used tomato)
6 tbsp Artichoke Marinara
1 seitan sausage, thinly sliced (I used artichoke and roasted red pepper)
¼ cup Roasted Red Peppers, sliced
¼ cup Artichoke Hearts, chopped
4 Garlic Olives, halved
2 slices Soy Mozzarella
1 Italian Plum Tomato, sliced
2 tbsp grated Rice Parmesan
2 thin slices of red onion
Pea Sprouts for garnish
Take a 10–inch seasoned cast iron skillet and heat over a med-low flame- add the marinara, onion, seitan sausage slices, Rice Parmesan,– sauté until the onions are opaque and the sausage is lightly browned- about 2 minutes per side. Turn out onto a cutting board or dish and set aside while you build your sandwich- place one piece of flatbread in the skillet and then lay the seitan slices on top of the bread- follow with the onions, olives, and tomato slices. Cover the vegetables with the cheeze and then the artichokes- top with the other slice of bread and then continue to cook once more, over medium low flame. Press down using a large spatula and weight it down further by covering the spatula with a brick that has been covered with aluminum foil. Cook flipping once until the sandwich is a light crispy golden and the cheeze is melted- about 4 minutes per side. Turn out onto cutting board and slice in quarters- then garnish with sprouts. Serves 4.
