Cherry Walnut Bundt with Almond Kreme Topping

Recipe to follow.
2 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 cup granulated sugar
1/8 teaspoon salt
3/4 cup vegetable oil
Replacer for 2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
2 cups dried cherries
1 cup walnuts, chopped
Preheat the oven to 350
Grease and flour mini bundt pans. Set aside.
In a bowl, combine the flour, sugar, oil, egg replacer, vanilla, baking soda, cinnamon and salt. Mix well. Stir in the cherries and walnuts.
Pour the batter into the pans. Bake for about 35 minutes or until a wooden pick inserted in the center comes out clean. Cool on rack for 15 minutes and remove from the pans to cool completely.
Garnish with whipped topping and cherries.
Makes 12 servings.
