I made a fresh batch of low-carb cheesecake this week. This was probably the best batch that I've made so far. the texture was perfect, and the taste? Divine. I used a block of low-fat cream cheese with a block of zero-fat cream cheese, two medium eggs, a cup and a half of splenda, and two teaspoons of vanilla extract. i made the crust with almond powder. Combine all the ingredients, blend using a hand blender till the mixture is smooth, and pour into the crust. Bake at 350 F for about 40 minutes, let it cool down, and refrigerate for about 2 to 3 hours, or overnight.
