I hear a lot of folks complain that it's tough to cook a low-carb dinner. Vegetarians seem to have a tougher time with this task. Well, it is not that difficult to whip up a good D-friendly meal. Take today's dinner, for example. I julienned a Japanese eggplant, a medium onion, a garlic pod, a few fresh mushrooms and a tomato, and sauteed them with a pinch of olive oil and some chinese five spice, along with a few cubes of tofu and some bean sprouts. Cover and cook for about 10 minutes. Sprinkle salt to taste, and add some wasabi peas for a crunchy texture. Serve with some fresh cut peppers, carrots, pickled olives and mushrooms. Spritz with some lime juice and enjoy. I'm guessing about 25 grams of carb., so I can have some pudding later. The key to a good, low carb. vegetarian dinner? Color, texture and some astute ingredients. Now pardon me while I eat dinner while it is still warm.
