Every Xmas is a full baking project for me. It usually ranges from 70-80 dozen cookies that need to be baked. Yes, that's 70-80 dozen. As I want all the treats delivered fresh, I found myself having to repeat bake (i.e. every day) early in the morning (read midnight -3am, then once again at maybe 7am) such that they were cooled and ready for packaging by late morning.
