This was actually quite unintended but it makes sense (considering the lighting conditions)

this was meant to be mushroom noodle soup - but I couldn't find any dashi powder at the supermarket we were at last night. So Larry suggested that I convert it to a laksa.

Cook udon noodles as per instructions on packet
fry mushrooms (i've used sliced button mushrooms, quartered shitake mushrooms and black fungus) in some vegetable oil. Fry for a couple of minutes - set aside in a bowl. Heat some oil in a wok, fry laksa paste till fragant, add a couple of cups of water & a can of coconut milk, bring to a boil, simmer for 10 minutes, add mushrooms, chopped spring onions (about 4), add silken tofu (cut into cubeish sort of chunks) and some corriander (cilantro), simmer for a few minutes to heat. Divide cooked udon noodles between bowls, add laksa - serve.
