I was actually looking for a different soup recipe but I couldn't find it :( so I decided on this instead

1 tablespoon olive oil
1 brown onion - finely chopped
2 garlic cloves - crushed
2 teaspoons ground corriander (we had none - so i used 2 and a bit pf dried corriander leaves)
1 teaspoon ground cumin
1/2 teaspoon dried chilli flakes (for me it was closer to 1)
750g cauliflower, trimmed & cut into florets
2 cups vegetable stock
2 cups water
1/4 cup cream

1. Heat oil in saucepan over medium heat. Add onion & garlic. Cook, stirring for 6-7 minutes or until very soft.
2. Add coriander, cumin & chilli flakes, increase heat to high. Cook, stirring for 2 minutes. Add cauliflower, stock and water, cover and bring to the boil. Reduce heat to low, simmer for 20 minutes partially covered until cauliflower is tender. Set aside for 20 minutes.
3. Blend soup in batches until smooth. Return to saucepan. Stir in cream over low heat until hot.

I've served with a little bit of extra ceam & fresh corriander leaves and some parmasen bruschetta :)
