Homemade Marina Sauce

This was actually easier than I thought :)
This is completely winged - I didn't use a recipe (EEK!!!)
swirl of olive oil
fry two onions & some garlic (to taste)
I added 2 chillis for a little heat
fry until soft
add tomatoes (i used our homegrown tomatoes - mixed with some overripe store bought tomatoes). Add bay leaves & stock - bring to boil - season. Simmer for about 30 minutes and add fresh oregano (i should have used basil as well but we had no basil). I simmered this for about an hour to let the tomatoes breakdown and thicken up.
The rest was pretty simple...
make pasta per packet instructions - add marina mix to pasta sauce (unfortunately the marina mix made my sauce very watery) top with grated parmesan & eat!
