I've made this a few times now :)
this series of photos is done specifically for the wednesday night meal club

basic recipe:

Melt 3 tbsp butter in a saucepan over medium heat until sizzling. Stir-fry 1 onion (chopped) and 1 clove garlic (chopped), until onion is soft. Add 1 cup dried red lentils, 400g can chopped tomatoes, 2 tbsp sun-dried tomato paste and 3 cups vegetable stock and bring to the boil.

Reduce heat and simmer for 45 minutes, stirring often, until the lentils are soft and creamy.

changes I've made over time (and for this)
I've doubled the quantities
i've also added fresh coriander to it (my friend elli does a similar soup so I borrowed the coriander idea from her) and due to not having enough red lentils last night - I've made it 1 and a half cups of red lentils & half a cup of soup mix (corn, beans, split peas, barley etc)
