Potato & Leek Soup

recipe:
2 bulbs garlic - roasted with some thyme & olive oil - roast @ 180 for about 20 minutes - let cool & skin
chop 2 medium leeks & 1 stalk celery and fry in some oil for about 5-7 minutes until soft - add 2 cups stock, 2 cups water, add 750g diced potatoes and some thyme, bring to boil, simmer for about 15 minutes or until potato is soft, add garlic. process to desired texture, Larry doesn't like creamy soups so i try to leave it a bit chunkier. Bring back to stove, add 1/2 cup cold water, bring back to heat - serve
