A soup from Trás-os-Montes in the north of Portugal called "Água de Unto" (Water of Unto).
Unto is the pig fat molded in a ball and evolved in pig skin and smoked over the fire. This soup is made from the water where the unto was boiled and served with bread and typically it was eaten at breakfast by shepherds, and it's very tasty. It's a bit similar to another portuguese soup from Alentejo (a region in the south of Portugal) which is called Açorda.
