it's never a bad time for cucumber sauce but it is always more enjoyable when it is hot out. i hope we can get some cucumbers growing. our soil is a tad unbalanced right now and the mister is doing his best to figure out what happened.
super easy to make. i never measure :
*plain yogurt
*a wee bit of olive oil
*chopped cucumber (if it's store bought i peel the skin off)
*chopped garlic (not crushed, crushed garlic omits more oil and it gets HOT)
*fresh lemon juice
*salt & pepper
you can also add dill or green onion. I've made this with cilantro also. Add more garlic and it makes a pretty nifty sauce for "pizza". it also makes a nice "marinade" for chicken or tofu and of course it is amazing on squaw bread and other sandwiches.
