Frozen Parsley Cubes

I bought a huge bunch of organic parsley from the market and, after using it in a few different recipes, I had quite a bit left. So that it wouldn't go to waste, I made frozen "parsley cubes." Simply fill an ice cube tray with chopped herbs, fill in the gaps with water, freeze, and place the frozen cubes in a ziploc bag. I've done this with cilantro as well and the defrosted cubes produce good results in things like soup, casseroles, veggie burgers, and sauces.
