These are Hobo Eggs.

Lightly grease griddle with olive oil (you can use butter but olive oil is better for you). Heat gridle to a medium heat. Then take out a juice glass, some glass with a small diameter and cut the center out of the bread. Lightly brush olive oil over pieces and bread. Place bread on hot griddle. Wait a bit to brown and then crack eggs into middle. I used one complete egg and then 1 egg white only. (To keep the cholestrol down) You can't really use egg white substitute for these. Then just let cook till egg is cooked half way through and bottom is solid, flip. Let cook the till other side is brown. Plate up, lighty salt and enjoy.
