I Am Clementine, Hear Me Roar Cupcakes

Cuddly yummy inside. Recipe to follow.

3 cups flour
1/3 cup sugar
1 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
Replacer for 1 Egg
3/4 cup vegetable margarine
1 cup vanilla soy yogart
5 clementines, peeled and broken into sections

Combine all ingredients adding the clementines last. Pour into lined muffin tins- fill half 1/2 way and bake in pre-heated oven 375 degrees 20 minutes. Cool. Cut plug from middle, fill with fig filling and replug. Ice with Orange Glaze.

Fig Filling

8 ripe figs, peeled and diced
3 tablespoons clementine juice
1/2 cup agave
In sauce pan bring mixture to a boil, reduce and then cool.

Orange Glaze
3 tablespoons Triple Sec
1 tsp Clementine Zest
1 cup Powdered sugar

Combine and drizzle. Don't forget the lion sprinkles.

Makes 12-15 cuppies.
