have a menu planned for the coming week, starting with tomorrow. had to make up something today and i had all these beets and carrots from the garden that have been patiently waiting. so here's what i did...

cooked up some quinoa and dressed it with sesame oil, soy sauce, rice vinegar, garlic, shallots, brown sugar and black pepper.

added the rest of the frozen peas we had and stirred it all up.

roasted up the beets and carrots with some olive oil, s & p just enough to soften them but still give them some crunch; and then sauteed the beet greens in the same. chopped it all up and mixed it all in and just before i popped it into the fridge to wait for dinner, i scooped out a cup for my lunch.

oh...this is GOOD!
