Found the recipe for "Colorful Veggie and Tortilla Dinner" in Pillsbury's Good for You! (General Mills, 2006).
Basically, this is brown rice with kidney beans, frozen mixed vegetables, vegetable broth, chopped canned tomatoes, cumin, coriander, and cilantro all cooked together with something else I am sure I am forgetting. We put the bean mixture on a hot tortilla and then top it with fat free Greek yoghurt, salsa, and a little fat free cheese. It's all too messy to roll up (and the recipe doesn't say to roll, anyway) so we just eat it with forks and knives. It's a very fast and filling meal which also happens to be super nutritious and quite easy on the wallet (my favorite kind of meal!)
