I've gotten behind on posting pictures, though I've been taking them.
I've been having trouble with energy but I had this insalata panino stored away; all it needed was to be cut up. It's made out of rolled mozarella cheese, salami, sun-dried tomatoes, and arugula. It has a lot of fat from the cheese and meat, so it's definitely not an everyday thing, but it was a nice change. The rice crackers and GF pretzels were to cut the richness of the cheese and meat.
The salad is another "Cobb" salad, with apples and gorgonzola in a honey mustard dressing over mixed baby greens.
Since I didn't want the panino to melt, I put miso soup fixings into the soup bowl for him to add hot water to at lunchtime. That's sliced radishes, green onions, tofu cubes and red miso.
He liked this but said he preferred the lighter if less held-together rollups I make with turkey and cheese.
