2 Tablesp. canola or other vegetable oil
1 cup chopped onions
2 gloves garlic, minced or pressed
2.5 cups peeled and cubed winter squash
2 celery stalks, diced
half cup peeled and diced carrots
2.5 cups cubed potatoes
1 teasp dried oregano
2 teasp salt
half teasp ground black pepper
6 cups water
4 cups chopped kale
1.5 cups cooked or canned cannellini beans.

My amendments:
Decreased the salt in the recipe. Added: lemon juice, balsamic vinegar, fresh thyme, apple cider, pepper spread (a gift from Giles). Didn't have kale, so used spinach instead.
The bowl looked like it would be perfect for mussels, so the second day I added wine, tomatoes, mussels, and a piece of cod.
