A chunky minestrone soup..
Finely chop 1 large onion, two carrots, 2 leeks and 2 cloves of garlic.
Sweat in tablespoon of olive oil for 5 minutes
Add enough vegetable stock to cover everything and two 400g tins of chopped tomatoes.
bring to a boil and then simmer gently for 20 minutes with the lid of the pot on till carrot is starting to become tender.
Add good handful of finely sliced cabbage, a chunkily chopped courgette, a tin of drained and rinsed haricot beans and two large handfuls of pasta shells.
Stir well and simmer for a further 15 minutes with the lid off.
Serve in a warmed dish with cheese and freshly ground black pepper. Fresh buttered rolls on the side.
