for the sandwich:

sear the tofu with salt and pepper and then set aside. cut open a baguette, smaer both sides with mayo (i used vegan mayo), one side with sriracha, and the other side with a sprinkling of herbs. i did a julienne of carrot and cucumber, salted it and added a splash of red wine vinegar to create a quick pickle. slice the tofu on the bias, mount onto the sandwich, and top with the pickle. smoosh the bread back together and then cut in half, again on the bias.

for the goat cheese:

chop some herbs (i used fennel fronds, tarragon, thyme, and chives) and put them into a bowl. slice medallions out of the goat cheese, and sprinkle with freshly ground black pepper. press the medallions lightly into the herbs, then sautee them very quickly in olive oil. when they start to melt, remove from the heat and sprinkle with pomegranate seeds.
