A versatile fresh "sauce" inspired from Aug 2007's Bon Appetite magazine that can go with bread, pasta, fish, meat or poultry. I made a giant batch for the potluck, but repeated the recipe because, well, tomatoes are everywhere... and who doesn't love fresh tomatoes??

1.5lbs of plum tomatoes are thinly sliced with kalamata olives, red onions, roasted red peppers, fresh Italian parsley, fresh oregano, olive oil (I used grapeseed), lemon juice, garlic and crushed red pepper. Salt and pepper to taste.
