Deep fried calves foot salad, mustard fruit £9.50
Pickled, braised and then coated in a thin bread crust, these fried wedges were surprisingly light, and lacked any traces of oil or grease from its golden bath. The gentle paper thin crisp shell gave into the gentle pressing of my knife to reveal a melt-in-the-mouth and almost savoury jelly-like layer of what was the calves foot. I thoroughly enjoyed the contrast of the crunchy, toasty and crisp case to the smooth gelled, clear and slightly stringy interior. This was very good. Peppery rocket dressed with a tart dressing cuts through the sweet cloying flavours of the strange, almost grapefruit-looking, sticky, glossy and sugary pulp of the mustard fruit, while a Thai sweet-peppery sauce binds all the components of the salad together.
