Oh dear - cast aside any thoughts of a diet with these around!
If you dont make the muffins make the frosting - it's gorgeous!!
225g Plain flour
4 x 37g packets of Maltesers (crushed, though leave 12 whole to top the muffins - or 24 if making mini muffins)
110g golden caster sugar (I used bog standard white sugar!)
1 tablespoon baking powder (that's a 15ml UK tbsp)
half teaspoon salt
1 medium egg
142ml soured cream
5ml vanilla extract
125g unsalted butter, melted
75ml (5 tbsp) milk (I tried to limit calories! - and used skimmed!! LOL!)
For the caramel icing (double YUM!)
200g golden icing sugar (what!?! - nah I used plain 'ole white icing sugar!)
1 tbsp golden syrup (Lyles - only the best!!)
25g unsalted butter - softened.
upto 1 tbsp (15ml) milk (again I reduced the cals by using skimmed! LOL!)
oven to 180*c / gas 4
Sift flour. Add crushed maltesers, sugar, baking powder & salt.
In separate bowl beat together the egg, soured cream, vanilla, butter & milk, then mix into the dry ingredients until just combined (do this by hand - do not over mix).
divide into lined muffin tins (makes 12 standard muffins or 24 mini muffins).
Bake 12-15 mins, cool for 5 mins in tray.
Whilst cooling detract from the need to eat one by mixing the topping up - chuck all ingredients (except for the milk) in a bowl and mix. Add milk to achieve the consistency you want.
Ice muffins, adding the all important malteser on top ( oh & a dusting of cocoa powder!) ... or leave the malteser off, hence cutting calories further!! LOL!
