Golden Smoked Tempeh Cupcakes with Chocolate Butter Cream

Smoked tempeh inside a golden cupcake, chocolate center and more chocolate butter cream on top. Decorated with "No-Bacos".

3/4 cup vegetable margarine
1 cup sugar
1 1/2 cups cake flour, sifted
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
1/2 cup soy milk
3/4 teaspoon vanilla extract
Egg Replacer for 3 eggs
1 cup tempeh, stir-fried with 2 tbsp Liquid Smoke and 1 tbsp molasses
Mix all ingredients except for tempeh together.
Fill cupcake liners 1/2 full .
Spread the stir-fried tempeh out on cookie sheet and bake 200 degrees for 20 minutes- cool and then divide between cuppies and stir in- bake 20 minutes. Cool.
Mix 2 cups of your favorite chocolate buttercream and scoop out a plug in each cuppie- add some buttercream and recap. Ice the cuppies or pipe and then sprinkle with vegan "no-bacos". (Or process some tempeh and sprinkle with that)
Makes 24 cuppies.
