Coconut Crepe With Blueberry

1 cup coconut milk
4 tbsp vegetable margarine
1 tbsp agave
1 cup cake flour
1/4 teaspoon salt
2 tbsp shredded coconut
2 tbsp dried blueberries + 1 tbsp
Whisk together all ingredients except blueberries.
Incorporate 1 tbsp blueberries-
Cook in crepe pan and fold over twice- plate.
Sprinkle with a little coconut, more blueberries and blueberry syrup.
And powdered sugar.
Serves 2.
Blueberry Syrup:
4 tbsp agave
½ cup maple syrup
2 tbsp blueberries- Cook together and reduce by half.
