Smoked Salmon with Fennel and Mash

First marinate the salmon in a mixture of maple syrup and whole grain mustard. (1:2)
Smoke the salmon carefully for about 20 minutes on maple-wood-chips until almost done.
Serve with mashed potatoes mixed with some spring onions. And some fennel, sauteed for 25 minutes in butter and white wine. Oh, I started with some shallots and finished with some dill.
Then I made a little bit of sauce by adding some of the marinade with some creme fraiche, salt, pepper and dill.
I thought it all worked well together, but I must admit, my partner thougt the salmon was too sweet.
