Åland's Pancake

6 eggs
1 cup sugar
2 cups wheat flour
3 heaping cups rice, half-cooked
2 teaspoons cardemom
1 litre milk
1,5 teaspoons salt

Mix together and whisk lightly egg, sugar, salt and cardemom. Add 2 cups of flour and, when blended, stir in rice. Add milk and mix well. Pour batter into pan and bake at 220C for about 25 minutes. Bake until golden brown and firm. Serve with prune compote and whipped cream.

[this varies from the usual pannukakku by using rice]
