This is the fist time that I've tried beef strognoff since I went vegan simply because it seemed to be such a hard recipe to adapt to veganism. I have to say though, after having eaten it for two nights and then for lunch on a third.... this is THE BEST beef strognoff that I've ever made! I used gardein beefless tips for the beef part......they were incredible btw.

Sautee some thinly sliced shallots and onions until they brown cripsy phase starts. Add the garlic and beef tips mushrooms and sautee for another 5 minutes. Set aside.

In the oil that the onions were sauteed in, add some flour and salt and pepper. Make a nice dark roux

Add water to the roux until you get the right consistency for the sauce.... about like a waffle batter.

Use beefless bullion cubes to add some flavor to the mix then add back in the onions, beefless tips and mushrooms. This should all simmer for awhile ... while you do the apples.

Sauteed apples are easy... slice, butter in a pan on low-med. Sautee until fork tender. Add natural brown sugar and I add molasses.

Add vegan sour cream at the very end of the dish, right before you serve.
