basic pizza dough:

3 cups bread flour
1 cup hot water
2.5 teaspoons yeast
2 tablespoons sugar
1 teaspoon salt
1 tablespoon olive oil

mix the yeast and sugar into the water. let it sit for 10-15 minutes or until it's covered with a layer of foam.
add oil and salt to the water, then add it to the flour and knead until smooth. i use a kitchen aid. put the dough ball into a large oiled bowl, cover with a damp cloth, and let it rise for about 2 hours in a warm place.

once it's doubled in bulk, punch the dough down and divide into two balls. each one will make a large thin crust pizza. you can freeze the second one if you don't want to use it this time. roll it out into a big circle and place on a greased pan.

top with your favorite tomato sauce, cheese, and toppings. bake in a 550 degree oven for about 10 minutes of until cheese is melted and bubbling and crust is golden brown.

this particular pizza is topped with black olives, red onion, crimini mushrooms, and leftover nutri subji (TVP cooked with tomatoes, onions, and spices).
