finally started making my own bread. i had no idea it was so easy. and so delicious! :)

INGREDIENTS:
1 cup warm water (110 degrees F/45
degrees C)
1/4 cup sugar (or other sweetener, helps the yeast work)
2-1/4 teaspoons active dry yeast
3/4 teaspoon salt
2 tablespoons vegetable oil
3 cups bread flour (i use half unbleached white and half whole wheat. you can use any combination)

DIRECTIONS:
1.In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam (10-15 minutes).
2.Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. (i mixed it in a stand mixer with the dough hook). you may need to add more water with wheat flower, just add it a few drops at a time until a stiff dough forms. Place the dough ball in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise in a warm place until doubled in bulk, about 1 hour.
3.Punch dough down and knead for a few minutes. Shape into a loaf, and place into a well oiled 9x5 inch loaf pans. i use a cast iron pan, it gives a much better texture to the crust. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
4.Bake at 350 degrees F (175 degrees C) for 20-30 minutes, until the crust is nice and brown.
