Goa is a popular holiday destination in India but the best part about Goa is the food. Goa was a Portugese colony and the food is a mix of piri-piri style sauces and indigenous coconut based curries
Marinate 400gm prawns with 1 tsp salt and half tsp turmeric powder. Grate half of a fresh coconut and add to it 8 dry red chillies + 1 tbsp pepper corns + 1 tbsp corriander seeds + 1 tsp caraway seeds. Add some warm water and grind to a fine paste. Extract the spiced coconut milk from the ground paste by squeezing it through a cloth. Mix the residue with half cup hot water and let it stand for 10 minutes. Squeeze it through the cloth again. Discard the residue.
Heat 3 tbsp oil in a pan and add to it 1 finely chopped onion + 3 cloves chopped garlic + 1" chopped ginger + 4 chopped green chillies. Fry for 10 minutes stirring occassionally. Add the marinated prawns and fry for 2 minutes while stirring. Add the spicy coconut milk and boil for 10 minutes. Extract the pulp from 2-3 pieces of fresh tamarind by soaking in hot water. Add the tamarind pulp to the curry and boil for 2 minutes. Serve with steamed rice.
