wild/white rice mix (just bought a pressure cooker so that I could do brown rice, excited!)
Gravy is standard roux brown gravy with mushrooms added
Fried Okra is bagged
Who doesn't love chicken fried gardein?!?
To chicken fry the gardein mix cornmeal, flour and bread crumbs with some cajun seasoning and pepper. Dredge the gardein protein in it once, set aside for 15 minutes (until the flour goes from white to wet) dredge again, set aside again, dredge again. The triple breading assures maximum crispness when fried. You want to fry in enough oil so that when frying the oil comes up to the edge of the protein. 1/4 ince of oil should do it and don't add the gardein until the oil is shimmering. I fried the okra in the same skillet.
