beans over rice with cornbread

Sautee a large onion until cripsy
thrown in some garlic and stir
add 1/2 soy crumbles / brown
add 1 can crushed tomatoes
add 2 cans of kidney beans
cook 30 mins to allow flavors to mingle
serve over rice
cornbread is mix / sub rice milk for cows milk and pureed tofu for the egg. I puree my tofu to incorporate lots of air, I believe this lightens the final product. Serve with copious amounts of Earth Balance
