Recipes to follow--

3 cups whole wheat flour
1 cup unbleached white bread flour
Pinch of salt
1 teaspoon baking soda
1 3/4+ cups soymilk + 1 tbsp apple cider vinegar
3 tbsp molasses
2 tbsp brown sugar
2 ounces vegetable margarine
Replacer for 1 egg
Melt the margarine –beat in the replacer and gradually add the soymilk. Add the molasses and brown sugar.
In another bowl sift and mix the dry ingredients and then stir in the soymilk mixture. You can do this traditionally and steam it in a coffee tin or just work it on a floured cutting board like I did, form into mini loaves, sprinkle with oatmeal and place on a greased cookie sheet. Bake at 400F for 40 minutes on the middle rack.
