Country fried Gardein
triple bread gardein chick'n filets and fry until darkly crips. The breading I make is 50% italian bread crumbs, 25% cornmeal muffin flour and 25% cake flour. I do this because I think it makes for a good country style breading.
Creamed Potatoes
cut youkon gold potatoes into large cubes and bring to boil in a pot. When boiling starts, turn down the stove to little more than a light bubble and set the timer for 20 minutes. Drain potatoes and dump into large bowl followed by earth balance (softened) and rice milk. Add more salt than you think is necessary and more pepper than you'd think you'd like. Mash it all together with a potato masher.
Gravy is canned, Campbells mushroom gravy, it's vegan!
Corn is canned. Add butter to the pot to make regular corn super corn!
