Vegan Skillet Strogonoff my own recipe
16 oz wide potato noodles (we find them in the kosher section at wholefoods)
1/2 lb of boca soy crumbles
1 can vegetable broth
1 cub of vegetable bullion
tofutti sour cream
water
salt
pepper
onion
garlic
olive
Sauté a large sweet onion until translucent. Add boca soy crumbles and 1 clove garlic minced. Sautee 5 minutes more, salt and pepper to your taste. Add vegetable broth and turn heat to high, bring to boil. Add potato noodles, stir, reduce heat to med and cover for 5 minutes.
The noodles cook very fast and since they are potato starch, the water quickly thickens into a very thick mixture. Add water as necessary to get the consistency you want. Top with sour cream to serve.
