White beans were cooked in my new electric pressure cooker! They were delicious and get this..... cooked FROM DRY BEANS in 35 minutes. Amazing; that is a 4 hour job normally, 2 if you soak overnight. I am really liking it. It's a Cuisinart brand.
White beans in electric pressure cooker
Finely chop a large onion and sauté it in 2 tablespoons of olive oil until soft. Add 2 cloves finely minced garlic, sauté 3 minutes more.
Add 1 cup of dry white beans and stir. Add four cups water and 1 vegetable bullion cube.
Add herbs as you like but do not add salt. I use a bouquet garni (herbs in a little cheesecloth bag with cotton twine) of bay leaf, 2 cardamom seeds, thyme and oregano.
Close pressure cooker and set for high pressure and 35 minutes.
Serve over white or brown rice with corn bread muffins and earth balance. Also in the picture is some home grown tomatoes that were almost consumed before we started eating because they were fresh off the vine, warm and delicious!
