Seitan Tacos with Chipotle Ranch and Spicy Refried Beans

Here is the dressing recipe...
Ranch Dressing is perfect on salads and with veggies...I like to add lime juice to it and also spice it up. Here is the basic:
3/4 cup vegenaise
1/4 cup minced onion
1/4 cup soymilk
4 ounces organic silken tofu
juice from 1 lemon ( OR LIME)
2 teaspoons Dijon mustard
1 large garlic clove, minced
1 teaspoon onion powder
1 teaspoon vegan Worcestershire sauce
1/2 teaspoon celery seed
freshly ground black pepper
1/4 teaspoon kosher salt, to start
2 Tablespoons minced fresh chives
For the Chipotle version, substitute the tofu for vegan sour cream, delete the Worchestershire, mustard and sub cumin for the celery seed. Add 1 diced chipotle chile in adobo sauce and puree. Yummmmmm.
