Apple Crumb Cookies

Recipe to follow this weekend. Here it is- get baking!
1 cup vegetable margarine
1 cup packed brown sugar
½ cup raw sugar
Egg Replacer for 2 eggs
1 teaspoon vanilla
1½ cups wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 cups of oats
1 cup dried granny Smith Apples, snipped into chunks
½ cup melted white chocolate

Preheat oven to 350° F. Beat together margarine and sugars until creamy. Add replacer and vanilla extract; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Slowly stir in oats. Drop by rounded tablespoon onto an ungreased cookie sheets. Drizzle with the white chocolate. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on sheet, remove to wire rack.
Makes a bunch.
